Browned butter & garlic rolls
5 Tbsp unsalted butter, divided
1 small clove garlic, grated
6 Tbsp milk, divided
152 grams + 1.5 tbsp flour
1 1/8 tsp yeast
1 tbsp sugar
1 large egg, beaten & divided

Divide 1/2 butter in a bowl, reserve.
Remaining butter in saucepan, foam, golden brown, remove from heat, add garlic. Combine both butters, stir, until room temp/solid.
2 Tbsp milk, 1.5 tbsp flour, 1/8 cup water in saucepan until smooth, then over medium, cook, stiff paste. Scrape into large bowl.
Heat gently remaining milk until warm, add yeast, wait till foamy, about 5 MINS
Brush 8" x 8" square dish with 1 Tbsp garlic brown butter.
In the large flour paste bowl, add yeast mix, sugar, 1/2 egg & flour. Mix until shaggy dough forms, add salt, knead until smooth single mass. Add remaining butter, tablespoon at a time, kneading in between, knead until soft & smooth, about 8-10 min.
Transfer to oiled bowl, cover & let rise in a warm spot, 45-60 mins.
Punch down, divide into 6 pieces, roll into smooth spheres.
Place in buttered 8" x 8" pan, cover with wrap, let rise in warm spot, till doubled in bulk, about 35-45 mins. Should spring back, with a slight indentation.
Preheat oven to 375. Brush with remaining egg, sprinkle with salt.
Bake 20-25 min. Brush hot buns with remaining brown garlic butter.
