Screaming Cinnamon Buns

1/2 cup warm water
2 pkgs yeast
2 tbsp sugar
1 (3 1/2 oz pkg instant vanilla pudding)
2 cups milk, room temperature
1/2 cup butter melted
2 large eggs beaten
1 tsp salt
8 cups flour (approx)
1 cup butter melted
2 cups brown sugar
5 tbsp cinnamon


In a small bowl combine water, yeast and sugar. Stir until dissolved and set aside. In large bowl mix pudding with milk. Add 1/2 cup melted butter, egg and salt. Mix well, then add yeast mixture and blend well. Gradually add flour and knead until smooth, adding more flour if needed (this is a soft dough). Place in a very large greased bowl. Cover and let rise until doubled in size. Punch down and cover and let rise again. Roll dough out onto a large floured surface to a rectangle size approximately 34 x 21 inches. Brush with the cup of melted butter. Combine brown sugar and cinnamon and sprinkle over melted butter. Roll dough up and cut into about 20 rolls (dental floss works well for cutting). Place rolls into large greased pans and let rise in a warm place approximately 20 minutes. Bake in a preheated 350ยบ oven for 20-30 minutes or until done. Frost rolls while still warm with frosting below.

 

Cream Cheese Frosting: Beat 4 oz cream cheese with 1/4 cup butter until smooth. Beat in 1 tsp vanilla and 2 tbsp milk. Add 2 cups icing sugar and beat till smooth.
