Best Buttermilk Pancakes
2 tbsp butter, melted
1 c. flour
1 tsp salt
1 tsp soda
1 egg, beaten
1 1/4 c. buttermilk
1 c. flour
1 tsp salt
1 tsp soda
1 egg, beaten
1 1/4 c. buttermilk
Sift flour with salt and soda. Add egg, buttermilk and melted butter. Stir only enough to combine; a few lumps won't matter. Let stand for 5 minutes or more. Batter will be very thick. Heat skillet. Use about 2 tbsp. batter for each pancake. Turn when bubbles appear in middle.
