Crust
1 1/2 cups graham crumbs
3 Tbsp. sugar
1/2 tsp. cinnamon
1/4 cup melted butter
Mix together and press up sides and bottom of 12" spring form pan. Chill.
Filling
3 8oz. pkg. cream cheese, at room temp.
1 1/4 cups sugar
1/3 cup flour
6 eggs separated
2 tsp. vanilla
2 cups sour cream
rind and juice of 1 lemon
Crust:
Mix together and press up sides and bottom of 12" spring form pan. Chill.
Filling:
Beat cheese until soft, add sugar, add egg yolks one at a time, beating well. Add lemon juice, rind, sour cream, flour and vanilla. Add stiffly beaten egg whites. Bake for 1 1/4 hours at 350. Shut off oven, but leave cake in oven for 1 hour. Serve with a can of cherry pie filling or your favourite fruit.
