Carrot Cake
Lovely cake!
1 1/4 c. oil
2 c. sugar
2 1/4 c. flour
1 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1 c. crushed pineapple w/ juice
2 c. grated carrots
3 eggs
2 c. shredded coconut
1/2 c. raisins (optional)

Preheat oven to 350F
Grease and flour bundt pan or 9" x 13" pan. Beat together eggs, oil and sugar. Combine all dry ingredients & add to egg mixture, mix well. Add pineapple, carrots and coconut (raisins), mix. Bake approx. 45 min for 9 x 13 pan, up to 75 min for bundt pan.
