Carrot Coconut Loaf

3 eggs
1/2 cup oil
1 tsp. vanilla
2 cups shredded carrots

2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 cup sugar

2 cups coconut
1 cup raisins
1 cup walnuts


Mix eggs, oil, carrots and vanilla together.

Combine flour, b.s., b.p., salt, cinnamon and sugar in a separate bowl.

Add flour mixture to wet mixture and stir until barely moistened. Fold in coconut, raisins and walnuts. Spoon into loaf pan. Bake 1 hour at 350. Wrap and leave in fridge for a couple of days.
