Doris's Bran Muffins
1 1/2 c. all bran cereal
1/2 c. boiling water
1/4 c. salad oil
1 egg, beaten
1 c. buttermilk
1 1/4 c. flour
3/4 c. sugar
1/4 tsp. salt
1 1/2 tsp. baking soda
1/2 - 3/4 c. nuts or blueberries
(optional)
Add optional ground flax, chia (add a bit more milk if mixture is too dry).

Soak cereal in boiling water, set aside. Mix wet ingredients in a large bowl. Mix dry ingredients and add to wet ingredients, stir in soaked bran and nuts. Bake at 375 for 15 minutes.
