Jelly Roll

4 eggs separated
1 cup sugar
1 cup flour
1 tsp. vanilla
dash of salt


 

Beat egg whites till stiff, fold in 1/2 cup sugar gradually while beating.

Beat 1 egg yolk with other 1/2 cup sugar till thick and lemon coloured. Add vanilla. Fold eggs together and fold in flour. Put in jelly roll pan, greased and lined with wax paper. Bake about 10 min. at 400. Remove wax paper and trim crusts. 

Spread with jam and roll up or cut in squares and put a big spoon of whipped cream on each. Spread cream to look like fried egg white. Put apricot half on centre and you have poached eggs on toast.
