Pig's Ears

3 eggs
2 tsp. sugar
1/4 c. cream
1/8 tsp. vanilla
1/8 tsp. baking powder
1/4 tsp. salt
1 3/4 c. flour - approx.


Beat eggs, gradually add sugar & beat until creamy. Stir in cream, vanilla and salt then add flour & baking powder. Use just enough flour to make a soft bun dough. Cover & let rest 10 min.

Roll out the dough until quite thin (about 1/8") Cut into diamond shapes about 1" x 3" long. In the middle of the diamond make a slit large enough so the point from the opposite side can be pulled through and made to stay. Once folded in this manner, pop the dough into hot oil and deep fry until it is puffed up. Dry on paper towels and dust with icing sugar.

For heizenblozen cut into rectangles, approx. 3/4" x 1 1/2"strips -cut a slit in the centre.
