Raspberry Muffins
1 1/2 cups all purpose flour
1 cup whole wheat flour
1/2 cup sugar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
grated rind of one lemon (optional)
2 large eggs
1 cup buttermilk
1/2 cup oil
2 tsp vanilla
2 1/2 cups fresh or frozen raspberries

Preheat oven to 375ยบ. Prepare muffin tins (12 large). Mix the dry ingredients together. In a separate bowl beat eggs, then add buttermilk, oil and vanilla. Pour this mixture over the dry ingredients and stir just till moistened. Fold in the raspberries. Bake for 25 - 30 minutes.
