German Chicken or Rabbit

1 large chicken or rabbit cut in pieces
1 onion chopped
1 clove garlic
1 whole tomato
1 stalk celery
3 bay leaves
1/2 cup horseradish mustard
1/2 tsp whole peppercorns
1/2 tsp whole allspice
5 or 6 whole cloves
1/2 pound bacon slices
3/4 cup sour cream
1 tbsp butter



On top of stove melt butter in large roaster. Add onion and saute till transparent. Remove from heat. Baste pieces of meat with the mustard
then place in roaster with onions. Add garlic, tomato, celery and spices. Add enough water to the roaster to cover by half. Place strips of bacon over the pieces of meat. Cover and bake 2 hours for chicken or 3 for rabbit at 325ยบ. Check water level frequently and turn pieces of meat from time to time. When done remove meat and bacon from pan. Strain remaining liquid then put back in roaster. Thicken with sour cream and season to taste. Serve with potatoes or noodles. Delicious and well worth the extra effort.
