Chocolate Thumbprints

1/2 cup butter
1/2 cup white sugar
1 tbsp milk
1/2 tsp vanilla
1 oz unsweetened chocolate - melted and cooled
1 cup flour
1/4 tsp salt
1/3 cup choc chips (miniature)


Preheat oven to 350ยบ. Grease baking sheet. Combine 1/2 cup butter, 1/2 cup sugar, milk, vanilla and egg. Beat at medium speed of mixer until well blended. Add melted chocolate. Mix well. Combine flour and salt. Add to chocolate mixture. Mix until well blended. Stir in chocolate chips. Form dough into 1 inch balls. Place 2 inches apart on baking sheet. Press thumb gently into center of each cookie. Bake for 8 minutes. Repress centers after baking. Remove to cooling rack. Cool completely. Fill centers with Peanut Butter Cream Filling below.

 

For Peanut Butter Cream Filling: Combine 2 tbsp butter and 1/3 cup peanut butter in medium bowl. Stir with spoon until blended. Add 1 cup icing sugar. Stir well. Add 2 tbsp milk and 1/2 tsp vanilla. Stir until smooth. Fill cooled cookies. Makes 2 1/2 dozen 2 inch cookies.
