Jumbleberry Oatmeal Bars

Better than Starbucks?
Filling
6 cups fresh or fozen berries, blueberries, raspberries, sliced
strawberries etc..
1 cup sugar
1/4 cup water
1 Tbsp. finely grated orange zest
1 Tbsp. orange juice

Crumb mixture
2 1/2 cups flour
1 tsp. salt
3/4 tsp. baking soda
3 cups quick cooking oats
1 1/4 cups packed brown sugar
1 1/2 cups butter at room temp.
1 egg
1 1/2 tsp. water


Filling: In a large heavy sauce pan combine berries, add sugar and water. Bring to a boil over medium heat, boil for 20 minutes or until thickened, stirring frequently. Stir in zest and orange juice. Let cool.

Crumb mixture: In a large bowl combine flour salt and baking soda. Stir in oats and brown sugar. With fork or fingertips, blend in butter until well mixed and crumbly. Put 5 cups into a greased 9X13" pan, press evenly over bottom of pan. Bake at 350 F for 12 minutes. Let cool. In a small bowl lightly beat egg and water. Add 2 Tbsp. of egg mixture to remaining crumb mixture and mix until clumps form. Spred filling evenly over baked crumb mixture to within 1/4" of sides. Sprinkle with remaining crumb mixture breaking up any large clumps. Press down lightly. Bake at 350 F 35 to 40 minutes or until lightly browned. Cool then cut into bars.
