One Bowl Fudge Brownies

8 ounces semi sweet chocolate, chopped (or 1 1/3 c. chipits)
3/4 cup butter
3/4 cup white sugar
1/2 cup brown sugar
2 teaspoons vanilla
4 large eggs
1/2 teaspoon salt
1 cup all purpose flour (or spelt or coconut flour)
1 cup semisweet chocolate chips (optional)
1 cup chopped walnuts or pecans (optional)




In a large microwaveable bowl, melt the chopped chocolate & butter in microwave, at low temperature, stirring occasionally until just barely melted, cool until lukewarm. Stir in the sugars and vanilla and add the eggs, 1 at a time, stirring well after each addition. Stir in the salt and flour, stirring until just combined, then stir in the chocolate chips. Pour the batter into a well buttered and floured 13" x 9" pan and bake in the  middle of a 350 degree oven for 25 to 30 minutes, do not overbake. Let cool completely in the pan on a rack. 









 





Try these made with milk chocolate - just substitute for semi-sweet, very different from regular brownies but also very good!









 

These freeze quite nicely.








Try this icing on top, do while brownies are still quite warm.










Chocolate Icing

3 tablespoons butter

1/3 c. cocoa powder

1 pinch of salt

1/4 c. warm milk

1 teaspoons vanilla extract

1 1/2 c. icing sugar



Melt the butter in a medium size bowl in microwave.

Stir the cocoa and salt into the butter.

Stir until smooth, if too thick, microwave a wee bit.

Add
the warm milk in two parts, beating well after each addition. Add the
vanilla. Stir the mixture until it is smooth and the lumps are
eliminated.

Sift in the icing sugar and beat till smooth.

   

Pour over brownies & spread with spatula. This is NOT a thick icing like a buttercream.


Scream Cheese Brownies - for Halloween
mix of one brick cream cheese, 1/4 c sugar, 1/2 tsp vanilla and two egg yolks followed on top, with choc chips for eyes and bit of brownie batter for mouths
