Caramel Pie

Filling

3 egg yolks
1 cup brown sugar
6 Tbsp. flour
2 cups milk
4 Tbsp. butter
1 tsp. vanilla
3 Tbsp. caramel syrup


Caramel Syrup

1/2 cup sugar
1/3 cup boiling water
To make syrup, heat sugar in smooth dry skillet until golden brown, add
boiling water, cook to cream, stir.



Beat egg yolks with sugar*, mix flour with a little water to make a smooth

paste, add to first mixture, add milk, salt and caramel syrup. Cook in double boiler until thick. Remove from fire, add butter and vanilla. Cool. Add beaten egg whites or reserve for meringue. Pour into baked crust. If meringue is used add 4 Tbsp. sugar to stiffly beaten egg whites. Spread on top. Return to oven to brown.

 

*NOTE from Deb

I found it easier to add the flour to the dry brown sugar before adding milk.
