Pineapple Cream Pie
1 baked pie shell
5 Tbsp. flour
2/3 cup sugar
1/4 tsp salt
1/3 cup cold milk
2/3 cup hot milk
2 egg yolks, beaten
1 Tbsp. butter
1 cup crushed pineapple, juice and pulp
2 tsp. lemon juice
Meringue
2 egg whites
2-3 Tbsp sugar
5 Tbsp. flour

2-3 Tbsp sugar
Mix flour sugar, salt and milk, cook. Add egg yolks, cook 2 or 3 more
minutes. Will be very stiff. Add butter pineapple and lemon juice. Pour into
baked shell. Top with meringue.

Mix sugar and egg white, beat till fluffy. Spread on pie, bake at 300F for 12-15 min till golden tips.
