More of a glaze than a typical icing. One of my favorites, not too thick, not too sweet, not too rich.
6 tablespoons butter
2/3 c. cocoa powder
1 pinch of salt
1/2 c. very warm milk
2 teaspoons vanilla extract
3 c. icing sugar
Plus more sugar and/or cocoa to taste
Melt the butter in a large bowl in microwave.
Sift the cocoa and salt into the butter.
Beat until smooth.
Add the warm milk in two parts, beating well after each addition. Add the vanilla. Beat the mixture until it is smooth and the lumps are eliminated.
Sift in the icing sugar and beat till smooth.
if too sweet, add some more cocoa
if not sweet enough, add more sugar
1/2 a recipe will easily ice a dozen cupcakes, spread with spatula. This is NOT a thick icing like a buttercream.
