Joyce's Chocolate Icing

Really grand icing, not too sweet, special occasion stuff!
6 squares semi sweet chocolate
2 tbsp. heavy cream
1 c. + 1 tbsp. unsalted butter, divided
7 egg yolks
1 c. icing sugar
pinch of salt
1 tsp. vanilla


In a double boiler, melt chocolate, cream & 1 tbsp. butter. In a small bowl beat egg yolks till pale & thick, slowly beat in chocolate mixture till blended & smooth. Transfer back to double boiler, stir over hot water, low heat for 5 min. Do not let it get too hot, remove from heat, cool.

In a large bowl beat 1 c. butter with icing sugar till fluffy, add chocolate mixture, beat one minute till creamy & smooth.
