Rice Pudding - No double boiler req'd!

2 tsp. vanilla
6 c. milk (or coconut milk)
2/3 c. granulated sugar
3/4 c. short grain rice, arborio or calrose
1/2 c. cranberries or raisins
1/4 tsp. salt


Combine milk, vanilla and sugar in a large (4 qt.) heavy saucepan, bring just to a boil over medium heat, stirring often. Stir in rice, return to a boil. Reduce heat to low, cover and simmer for 1 1/4 hrs or until very creamy and slightly thickened, stirring occasionally. Add raisins about 30 minutes before it is finished cooking.

Sprinkle with cinnamon and serve, hot or cold.
