Easy Hollandaise Sauce

3 egg yolks
1 tbsp fresh lemon juice
dash of salt & cayenne pepper
1/2 c. melted butter

Place egg yolks, lemon juice and seasonings in food processor or blender. Turn it on high for four seconds. Remove cap & add butter in slow, steady stream while blending for a further 30 seconds, or until smooth & thick. Serve at once or keep warm over hot water.

In the unlikely event that this curdles, add one ice cube, turn on high and blend 15 more seconds. Makes about 1 cup.
