APPLE BACON BRAISED RED CABBAGE
2 slices bacon sliced thin
1 onion peeled and sliced
1/2 red cabbage, sliced thinly
1/4 cup cider vinegar
1 fuji apple cored and roughly chopped
salt & pepper

Crisp the bacon in a large pot over medium high heat. Fry until evenly browned then add the onions.
Continue to cook until the onions soften and lightly brown, stirring up any brown bits from the
bottom of the pan. Add the cabbage, vinegar and apples and season with sale and pepper.
Lower the heat. Stir as the cabbage begins to wilt then cover with a tight fitting lid and slowly
simmer till the cabbage is tender (1/2 hr give or take).
