Deb's Baked Beans

2 lbs dry navy beans
4 bay leaves
1 tsp soda
1/2 lb good home smoked bacon cut in small pieces
1 large onion
2/3 cup molasses
2/3 cup dark brown sugar
2/3 cup Chile sauce
3 tbsp mustard (your choice)
1 tsp salt
1/2 tsp pepper



Soak beans overnight. Drain then put in saucepan with soda and bay leaves. Cover with water and bring to a boil. Simmer 15 minutes then drain. Discard bay leaves. In a Dutch oven fry bacon till crisp. Add onion and sauté till soft. Add 3 cups water, remaining ingredients and beans. Bring to a boil, cover then put in oven at 300 for 3 or 4 hours, removing lid for last hour so sauce can thicken. Alternately you can do 6-8 hours in slow cooker. Makes a lot but it freezes well.
