Mushroom Soup

1 shallot chopped
4 or 5 cloves garlic chopped
3/4 cup dried wild mushrooms finely chopped
2 cups fresh mushrooms (your choice)
1tsp dried thyme or fresh if you have it
1 litre stock (chicken or veg)
1/2 cup white wine
1 cup heavy cream



Sauté shallot, garlic,fresh and dried mushrooms in 1/4 cup butter till transparent. Add thyme and wine and cook for a few more minutes. Add stock and simmer for an hour. Season with salt and lots of pepper. Add cream and heat till hot. So good.
